It's Monday!

Clearly an iPhone dump day!  Filled with all types of misc pics.

At the Ocean Deck!  It was a beautiful day out!

James and Susan on the last day of school!  Ready for a long, fun summer.

Little Miss K!  About to go on a date so I had to grab a pic of her all dolled up. 

About to go out to karaoke.  What a fun time we had. 

At the booth at Applebee's. Tom got up and sang several songs.  He still has a great voice considering we really havn't been to karaoke in years (not counting one or two times at Ocean Deck)

Menu Ideas;

I recently made an eggplant parmesan and it tasted so good!  Here are the details of the recipe (and a quick pic of the final dish).



Ingredients 

Original recipe makes 8 to 10 servings






Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
  3. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
  4. Bake in preheated oven for 35 minutes, or until golden brown.




And that is about it folks!  We are on the first day of summer and not really sure what our plans are today.  I have to keep the kiddos entertained that's for sure.  :)
