I can't believe it!  It is that time when we have to move out of our home and find a new house to rent for the upcoming year!

My precious daughter...

Havn't seen my daughter in almost a week and just thinking about her.  Thought I'd post a few pics.  These are some selfies that she has taken on her phone and it looks like she is having a ball!  Missing my girl!  Susan is growing up so quickly. She is going to be in 7th grade next year and she is having a great time with all of her girlfriends and spending some time with her uncle and aunt and grandma Kate.  I am so happy for her !  Happy Summer 2014!  :-)

It's a really hot summer so far...

...that is, if u are outside and at the beach!  The days have been beautiful but hotttt!

Splash pads are always a sure quick way to cool off. 

Afterwards, we skipped over across the street to a new favorite in town, a Sno cone shop!  Perfect location!

Made some yummy French toast for James.  He loved it ( and I kinda did too!)

Smith Summer - Week 2

The days of summer are quickly going by.  It's now the second week of summer vacation! Here are a couple of pics of what the Smith's have been doing.

Boiled Peanuts 411

Just to give those of you out there who are boiled peanut lovers like myself, a little info how long it takes to get a good boiled peanut.  

At our local Texas Roadhouse they give away free peanuts.  We'll I told my husband I was going to take a bag home after we had dinner .  I took then home and attempted the boiling the next day. 

It took me a good 6 hours to get them to the softness that I could eat them.  

But it was worth the wait.  

You boil the peanuts for an hour and then simmer for 4-5 hours depending on how soft you want then to be.

At the booth at Applebee's. Tom got up and sang several songs.  He still has a great voice considering we really havn't been to karaoke in years (not counting one or two times at Ocean Deck)

Menu Ideas;

I recently made an eggplant parmesan and it tasted so good!  Here are the details of the recipe (and a quick pic of the final dish).

Ingredients 

Original recipe makes 8 to 10 servings

Change Servings

• 3 eggplant, peeled and thinly sliced
• 2 eggs, beaten
• 4 cups Italian seasoned bread crumbs
• 6 cups spaghetti sauce, divided

• 1 (16 ounce) packagemozzarella cheese, shredded and divided
• 1/2 cup grated Parmesan cheese, divided
• 1/2 teaspoon dried basil

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
3. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
4. Bake in preheated oven for 35 minutes, or until golden brown.

And that is about it folks!  We are on the first day of summer and not really sure what our plans are today.  I have to keep the kiddos entertained that's for sure.  :)
